For Maids Who Brew and Bake

To make bisket bread, otherwise called French bisket

To make bisket bread, otherwise called French bisket Take a half a peck of fine flower, two ounces of coriander seeds, one ounce of annis seedes and the whites of four eggs. A half pint of ale yeast and as much water as will make it up into stiff paste. Your water must be but blood warme, then bake it in a long roll as big as your thigh. Let it stay in the oven but one hour. When it is a day old pare it and slice it , then sugar it over with fine powdered sugar and so dry it in an oven again, and being dry, take it out and sugar it again, then box it and so you may keep it all the year. Do you catch yourself wondering how large their thighs were? This recipe produced a lot of biscuit dough! (A peck equals about 32 cups of flour). For more reasonable portions try this:

    3 cups of flour
    1 tbsp. coriander seed (crushed)
    1 tbsp. anise seed (crushed)
    ½ cup of sugar
    1 egg white
    1 package of yeast.
    1 tsp. of sugar
    enough warm water to make a soft dough

Dissolve yeast as per instructions on the package, using ½ cup of the warm water. Gradually mix in sifted flour, spice mixture (I grind my spices in a coffee grinder kept specifically for that purpose), sugar and egg white. Add enough water to make a soft dough, about one cup. Let it rise one hour. Punch it down and form into a roll (perhaps as big around as your arm!). Let rise again, place on a baking sheet and bake for about 20-30 minutes at 350F. Let it cool completely and then slice it thinly and sprinkle sugar over it. Toast it lightly in a warm oven. The sugar will melt and form a sort of icing. Remove from oven and sprinkle with sugar again. Store in a sealed container.
